Hello bloggers...im so sorry to have been away for so many days!
BUT: here is the deal.
I’ve been a busy girl and just haven’t had much time.

HOW CUTE is this??
Simple Saturday was spent with part of my loved ones & sweet friends BRADLEY AND AMBER who celebrated their FIRST Anniversary as a married couple yesterday March 2, 2012. Congrats you two, we love you! We saw a friend of Casey's get married & we spent the evening out at the Red Dirt pavilion with BJ, but on the way home we decided we would have rather just been old and stayed home. (Not the hanging out with BJ part though.)
SUNDAY FUNDAY---->
lemmme just tell you how this started.
LOWES: buying materials for the tiling project.

Then mom and i ventured to Hawley to get more materials
While away I receive a phone call via Callie (Terry’s Wife)
Phone call: WE are going to go ahead and knock the wall out too. (Dad, Casey and Terry)
Me: oh ok....
Mom and i arrive home finally and the demolition begun.
plus laying the liquid nails/ hardie backer/ and actual screws for the actual project we had set out to do.
MONDAY consisted of still being manic---->
-taking calls all day while still trying to be of assistance to everyone else
-taking my little prince man to the vet (he wasn’t feeling soo well)
-finding out he had worms
-going to MCoys for more thin set (aka Versabond)
-Getting pizza and running many countless errands while everyone was working so hard at my house!
-Laying tile…just perfect
Where are we to now??

Tasty Tuesday… How about some Herb Crusted Pork Chops?
(whisper) Its healthy for you?? YESS!

Herb Crusted Pork Chops
Here are your ingredients:
Recipe adapted from Cooking Light
4 boneless pork chops, fat trimmed
2 Tbsp Dijon mustard
1/2 cup whole wheat Panko breadcrumbs
1 Tbsp fresh thyme, chopped
1 Tbsp fresh parsley, minced
1/8 tsp. salt
1/8 tsp. ground black pepper
1 Tbsp extra-virgin olive oil
Preheat oven to 450 degrees F. Rub mustard evenly over pork chops. Combine panko, thyme, parsley, salt and pepper in a large bowl and dredge pork chops in panko mixture.
Heat a large ovenproof skillet over medium-high heat. Add oil to pan and swirl to coat. Add pork chops, saute for 2 minutes or until golden brown. Turn pork over and place skillet in oven for about 8 minutes or until pork reaches 145 degrees in the center. Enjoy!

While I sit here in this quiet house this morning I really think about how blessed I am. I enjoy my family, love and friends being around. I enjoy my job and the fact that I am able to do things for myself and to help while people are helping me. My two puppies are amazing and so cute. Im a blessed girl and we should remember to give thanks to God more..afterall he could take it all away in a heartbeat. So when you say your prayers today make sure and remind him how thankful you are for all your many blessings.
